(WNY News Now) – Colton Courtney, a local rancher known for breeding Texas Longhorn cattle, is set to open a grocery in August supplying locally-sourced meats to the community.
Sherman, N.Y. – To all those looking for high-quality, locally-sourced meats at the grocery store, your search may soon be over. Colton Courtney is a Sherman-based rancher who is known primarily for his stock of Texas Longhorn cattle. However, he is looking to expand his role in the supply chain, and the future looks promising.
In a recent interview with WNY News Now, Colton discussed his plans to open the Branding Iron, a local grocery where he will sell high-quality beef, pork, and poultry products. The store will be located at 121 W Main St. in Sherman, NY, with a tentative opening date of August 1st.
All of the beef that will be sold in the store will originate from Colton’s own stock of Texas Longhorn cattle that are born and bred on his ranch, making it as close to farm to table as you can get.
For those unaware of what distinguishes longhorn cattle from other breeds, the beef processed from the Texas Longhorn is actually one of the leanest meats in the consumer market, owing to the diet their were raised on when first brought over to the Americas from the Iberian Peninsula.
Colton noted that their beef is 93% lean, giving it a lower fat content than chicken, pork, lamb, or venison. Additionally, it is low in cholesterol and sodium while also high in fiber and protein, making it a fantastic choice for the health-conscious consumer.
While they don’t have the facilities to raise the pork and chicken that will be sold in the store, Colton stressed that all of their products will be sourced locally, ensuring that the supply chain remains in the community.
Looking over the products the Branding Iron will be offering, Colton stated that their beef will be sold in all of the common cuts, such as t-bone ribeyes, tenderloins, and sirloins, as well as ground beef.
On the pork side of the spectrum, they will be offering sausage, bacon, spare ribs, pork chops, and ham, while they are still determining whether they will be offering whole chickens or thighs and breasts.
For beef and pork, they will also be offering quarters, wholes, and halves, with discounted pricing available for those looking to order large quantities.
For the skeptics concerned about the quality, all of the meats offered at the store will be processed at USDA facilities, and Colton’s ranch offers tours to let curious consumers observe the cattle, providing a transparency that can’t be matched at the corporate level.
For Colton, who was born and raised in Sherman and took over the family business 12 years ago, this new venture is an exciting opportunity to branch out further in the community, and the buzz is already reverberating throughout the local business scene. At the time of this posting, there have already been multiple businesses who have approached inquiring about potentially establishing a relationship with the store.
